Cooking with your children is such a wonderful way to teach and bond with them. With so many students learning at and from home right now; cooking is a fabulous way to teach math and science. From measuring ingredients to learning how to double recipes and cut them in half all require critical thinking, algebra, and geometry skills. This is a great recipe to learn how to double or half if you’re practicing.

Let’s talk about fillings for a minute. I make some version of these quite often for my kids’ breakfast. Sometimes I just fill them with cream cheese and strawberry preserves and put them out for them to eat in the mornings. I have even filled them with bacon, eggs, and cheese. These can become something completely different and something for every meal of the day. I am going to share more crescent roll recipes with y’all soon.

The day I made these King Cake Bites, I didn’t have any yellow sprinkles, but I did have yellow food coloring. So, I used yellow icing and sprinkled it with purple and green sugar. Have fun with this recipe and celebrate Mardi Gras from home. It’s going to be a lot of fun planning Mardi Gras celebrations and learning how to have the most fun at home with the people in our circle.

Instant Pot Summer Berry Bread Pudding

Instant Pot Summer Berry Bread Pudding

Instant Pot Summer Berry Bread Pudding. This berry bread pudding makes you think of summer breezes and warm sunshine at the very first bite. It smells like heaven while its cooking, and only takes about half the time of oven baked bread pudding. It’s really easy to make, so you can have it any old time you please, breakfast, lunch, or dinner, and everyone is sure to love it!

Instant Pot Summer Berry Bread Pudding

Summer is so close!  Only a couple of weeks left of school and everyone will be out waiting for Mom to cook up something delicious.  If you’re like me, you’re also looking to save money.  Summer can be expensive, especially with the kiddos at home all day every day.  This is my favorite time of the year to use my Instant Pot.  Not only are meals super easy and delicious, but they don’t require me heating up the whole house.  It has already started getting warm outside, so I’m looking for ways to keep from heating up the inside.

Instant Pot Summer Berry Bread Pudding

This Instant Pot Summer Berry Bread Pudding is the perfect way to keep the family happy and cool off!  Just scoop some ice cream on top and you have one of the best summer treats around.  I love bread pudding while it’s warm.  Even if you keep it in the fridge, you can heat it up later and put some ice cream on top.  This recipe can also easily be converted to fresh peaches, which also tastes amazing!  Just substitute 1 1/2 cups of your favorite fresh fruit and let me know how you like it.  Now, get to cooking!

Instant Pot Summer Berry Bread Pudding

Here’s what you’ll need:

  • 1 Loaf of French Bread, cut in bite size pieces, approximately 6 cups
  • 1/2 Cup fresh Blueberries
  • 1/2 Cup fresh Raspberries
  • 1/2 Cup fresh Blackberries
  • 1 package (8 oz.) Cream Cheese – softened
  • 1 Cup Sugar
  • 1 teaspoon of Cinnamon
  • 2 Eggs
  • 2 Teaspoons Vanilla
  • 1 Cup of heavy cream

Instant Pot Summer Berry Bread Pudding

For the crumble

  • 1/4 cup Flour
  • 1/2 cup of Oatmeal
  • 1/4 Cup Brown Sugar
  • 2 Tablespoons of granulated sugar
  • 1/2 Teaspoon Cinnamon
  • 1/8 teaspoon of Salt
  • 1/3 cup of butter – melted

To top it off (optional) – Maple syrup, or berry syrup (store bought) or powdered sugar, or some of both! The syrup drizzled over the pudding crumble with a little powdered sugar dusted on the top makes a pretty presentation for serving.

Instant Pot Summer Berry Bread Pudding

Get to cooking:

  • Spray a 7 inch spring form pan, generously with cooking spray, and set aside. Make a Foil sling to go under the spring form pan, by tearing off a long piece of long heavy duty aluminum foil, and folding it in half again and again, until you have a piece that’s about 2 feet long, by about 2 – 3 inches wide. This will enable you to lift the pan out of the Instant Pot while it’s still hot
  • In a large mixing bowl, break or cut the french bread into bite size pieces, and set aside. Place the cream cheese, sugar, eggs, vanilla, cinnamon, and heavy cream in the blender, and blend until smooth and creamy. Scrape down the sides of the blender, and stir any ingredients not blended. Pour the cream cheese mixture over the bread pieces, and mix until all pieces are coated. Place a bottom layer of the bread pieces in the spring form pan, and layer berries on top, then add another layer of bread pieces, and another layer of berries, until you’ve reached the top of the pan.
  • You can pile the bread or berries on top of the pan; it doesn’t have to be even with the top. Scrape the mixing bowl, and pour any remaining cream cheese mixture over the top of the bread pudding, in the pan. Place the sling in the Instant Pot, so you have the foil across the bottom of the Instant Pot stainless steel pot, and up the sides. Then, pour 1 cup of water in the bottom of the pot, and place the spring form pan over the foil, in the Instant pot, Place the lid on the Instant pot until it beeps and locks.
  • Make sure the pressure valve is set to “SEALING” and press the ‘Manual’ button on the Instant Pot. Set the time to 23 minutes, and allow the Instant to automatically build and release the pressure. When the bread pudding is done the Instant Pot will go to OFF, or KEEP WARM (depending on which instant pot you have). When it beeps after it’s done, carefully, and with an oven mitt, turn the pressure valve to ‘VENTING’ to make sure all pressure has been released. Lift the lid on the Instant Pot, and with oven mitts, take hold of the foil sling pieces on each side, and gently lift the bread pudding out of the Pot. Set on a wire rack to cool.
  • Crumble – After you’ve put the bread pudding in the instant pot to cook, make the crumble by combining the flour, oatmeal, brown sugar, sugar, cinnamon, salt, and the melted butter, in a bowl. Place the mixture on a parchment lined cookie sheet, and place in the oven for 15 minutes at 350 degrees, or until the crumble starts to turn golden brown. Remove from oven and set aside to cool.
  • To serve: Once the bread pudding and crumble have cooled, cut the bread pudding into 6 pieces in the spring form pan. Remove the spring form from the pan, and place pieces on a plate or in a bowl. Sprinkle crumble topping over the bread pudding, add a few extra berries, and top with syrup, powdered sugar, or whipped cream, or all three for a dynamic presentation. Enjoy!

Easy 10 Minute Homemade Applesauce In Your Instant Pot

The best part about making your own applesauce is that you can choose what goes in it.  We like sugar and cinnamon in our applesauce.  You can also use honey, maple syrup, artificial sweetener, or no sweetener at all.  You can also add a couple of eggs, flour, baking soda, and baking powder to make an amazing cake.  This is why I love making my own recipes and creating new ones.  When you know how to create things yourself, you learn so much about cooking, saving time, and saving money!  Give this recipe a try.  If you love it, then keep it like it is.  If not, change it up and make it your own.  Let me know, in the comments below, how you like to use applesauce the most!

Sweet And Spicy Candied Bacon Recipe

Sweet And Spicy Candied Bacon Recipe

Sweet And Spicy Candied Bacon Recipe.  National Bacon Day is coming up and I have just the recipe to help you celebrate.  This recipe is sweet, spicy, fun and easy to make.

Sweet And Spicy Candied Bacon Recipe

This sweet and spicy candied bacon recipe will become a favorite for your family.  It is great for parties, family gatherings, even great Christmas gifts.  You can package and box them for a great teacher gift or Christmas gift.  You can easily personalize this recipe and make it what you love.  During the holidays, I add cinnamon and pecans to the brown sugar mixture.  It tastes amazing!

Sweet And Spicy Candied Bacon Recipe

One thing that is important when you make this candied bacon is to let it cook.  Let it get brown.  I usually set my timer for 30 minutes to check the bacon.  If it’s not good and brown, then I set it for another 5 minutes and so on.  You want the sugar to caramelize on the bacon and you don’t want soft bacon.  You also don’t want to burn it.  Over-cooking is okay, just not burned.  Play around with it and see what works for you.  You can even add pecans to make a praline candied bacon, YUM!

Sweet And Spicy Candied Bacon Recipe

Sweet And Spicy Candied Bacon

Servings 12

Ingredients

  • 1 1/2 pounds thick cut bacon
  • 1/2 cup brown sugar
  • 1 pinch cayenne pepper
  • 1/4 cup maple syrup
  • 1 tsp chili powder

Instructions

  1. Preheat oven to 350 degrees.

  2. Mix brown sugar, cayenne pepper, and chili powder together in a mixing bowl.  Add maple syrup and mix until well blended.

  3. Lay bacon strips out flat on cookie sheets that have been sprayed with non-stick cooking spray.  I line mine with foil, then spray with non-stick cooking spray.

  4. Spread 1 T of brown sugar mixture over each strip of bacon (there are usually about 12-15 strips in 1 1/2 pounds of thick cut bacon).

  5. Distribute leftover brown sugar mixture over each piece of bacon then press the brown sugar mixture into the bacon with your hands.

  6. Carefully place cookie sheets with bacon into the preheated oven for 30-40 minutes.  I set my timer for 30 minutes and check the bacon.  If it's not done, I set the timer for another 5 minutes and repeat until the bacon is done.  You'll know it's done when it's nice and brown.

  7. Carefully remove the cookie sheets from the oven and immediately transfer the slices of bacon onto parchment paper and allow to cool.

Easy Bacon Jam Recipe

We love bacon around our house, but we only cook it a few times a year.  With baking season upon us, it’s time to break out the bacon and get to cookin’!  One favorite recipe around here is bacon jam.  Bacon jam is a great topping to so many dishes, which makes it the perfect addition to any recipe collection. Most often, we eat bacon jam on toast.  I also add it to a lot of dishes, especially when it has been in the fridge for about a week.  Just today, I added about 1/4 cup of bacon jam to my favorite black eyed peas and sausage recipe.

Easy Bacon Jam Recipe

My recipe calls for just  a pinch of cayenne pepper.  If you like spicier food, you can definitely add more pepper.  To get the strong coffee that my recipe calls for, I add 1 tsp of instant coffee to leftover coffee from my husband’s morning coffee.  The bacon, maple syrup and coffee flavors in this recipe are definitely going to make it a favorite around your house!  This Bacon Jam will keep in your fridge for about 10 days.

Help Mom Feel Special This Mother’s Day With Tyson, Thomas, and Walmart #TysonlovesMom

Sponsored post written by me on behalf of Tyson Foods, Inc. All opinions are entirely my own .

Oh my goodness!  How is Mother’s Day sneaking up on us like this?  I cannot believe it is just around the corner.  I am always looking for ways to celebrate my mother and mother-in-law on Mother’s Day.  This year, I will be treating them to brunch at my house.  What better way to spend time with both my mother, mother-in-law and all three of my children?  Of course, we will be celebrating early, so I can take a break on Mother’s Day as well.  I am a big fan of spending the day before Mother’s Day with my mother and reserving Mother’s Day for my children and husband.  Hey, I’m mom, I get to do that, right?
Thomas1

At Walmart, you can find everything you need to make Mother’s Day brunch special for your mom.  One of my favorite go-to recipes for Mother’s Day is a breakfast pizza that has become a hit with my mother.  This year, I decided to share it with everyone.  It is so easy peasy and I just know you will be impressed at how delicious it is.  Jimmy Dean® Regular Premium Pork Sausage and Thomas’ The Original Nooks & Crannies English Muffins are a must for this breakfast pizza.  You’re also going to need 6 eggs, 8 oz shredded cheddar or cheddar jack cheese, and tomatoes.  Your mom is going to thank you (and me).

thomas

One thing I love about this recipe is that it easy enough that my kids can even make it for me for breakfast in bed on Mother’s Day or my birthday.  You can really get creative with the toppings and it is a LOT of fun.  I can remember making breakfast in bed for my mom on Mother’s Day.  I’m not so sure mine was ever as sophisticated as making breakfast pizza, but it was always made with love and tons of creativity.  Creativity tastes good too, right?!?  I’m pretty sure that the most creative I got was the time I tried to make scrambled eggs and they turned out more like a yellow, sticky pudding LOL

Fun And Easy Spring Veggie Pillsbury Crescent Baskets #EasterWithPillsbury

This is a sponsored post on behalf of Pillsbury.  All opinions are 100% my own.

crescent veggies

Spring is here and summer is just around the corner.  Baseball season is in full swing and graduation is quickly approaching.  With three kids and all of our active and busy schedules, it is a constant struggle to keep the menu simple, healthy and delicious!  Pillsbury crescents are always an easy go-to for new, creative ways to get our crew to eat their veggies and get their much needed protein.  When we needed something yummy and portable this spring, I headed to my local Walmart to pick up some Pillsbury Crescents, then I got to baking.  I put a new twist on an old favorite of ours.

crescent baskets 2

We love spring vegetable pizza, so I was trying to come up with a new, easier way to get this family favorite in our baseball cooler with little hassle.  I found the perfect and oh-so-adorable way to do just this!  These turned out so cute, I decided to share them with our family and my daughter’s next sleepover.  One of my favorite parts of these crescent baskets is that you can take out the cheddar cheese and substitute fresh berries for the veggies.  This would make a tasty on-the-go breakfast that your family is sure to love!  With Mother’s Day around the corner, we are definitely going to take these along to all of our family gatherings.  Having an affordable way to impress our family and friends, just around the corner at out local Walmart will make our spring gatherings that much more stress free!

crescent baskets 3

First we need to gather our ingredients to create this delicious treat:

  • 2 cans Pillsbury Original Crescent Rolls, 8 count
  • 8 oz cream cheese at room temperature
  • 1 cup shredded mild cheddar cheese
  • 1 cup chopped fresh broccoli
  • 2 whole green onions, chopped
  • 5 grape tomatoes, sliced
  •  2 small orange sweet peppers, diced

crescent baskets 5

Next we will need to prepare our recipe for baking.  Another great part of this recipe is that it does not need to be served hot and the vegetables are all still fresh!  There is no need to cook the vegetables and lose all of that great flavor.  I haven’t cooked these with the veggies on top, but I’m sure they would taste just as great if you wanted to sprinkle the veggies on top before baking.  Give it a try and let me know what you think.

Get to baking:

  • Preheat oven to 350 degrees.
  • Mix cream cheese with mixer until creamy, then add cheddar cheese and mix with spoon until blended.
  • Separate each crescent roll.  Prepare a muffin tin by spraying it with non-stick cooking spray and line the cups of a muffin tin with 1 crescent per cup.
  • Place about 1-2 T of  cheese mixture into each crescent cup and carefully place into preheated oven for 12-15 minutes or until the edges of the crescent rolls are golden brown.
  • Carefully remove the muffin tin from the oven and place on heat-resistant surface.
  • Sprinkle the veggies on top of the muffins and allow to cool slightly.
  • Serve and eat!

Gather your ingredients:

  • 2 cans of large refrigerated biscuits
  • 6 eggs
  • 2 Tbsp Worcestershire sauce
  • 2 cups frozen home style hash browns
  • 6 oz (6 slices) of colby jack cheese – I like slices because they stay in place easier
  • 1/2 cup shredded cheddar cheese
  • 1 lb chopped ham
  • 3 green onions (chopped)

Get to baking!

  • Spray a 9 x 11 (ish) baking pan with non-stick cooking spray.
  • Cut biscuits into fourths and place in the baking pan.
  • Sprinkle ham and potatoes on top of biscuits.
  • Place slices of cheese on top of ham and potatoes and sprinkle with salt and pepper to taste.
  • Wisk the eggs, cream and Worcestershire sauce together in a small bowl and pour over the top of the cheese.
  • Cover with aluminum foil and place in the refrigerator overnight.
  • When you are getting ready to bake the casserole, remove it from the refrigerator while you are preheating the oven to 350 degrees.
  • Once the oven is preheated, carefully place the casserole in the oven (still covered) and bake for 45 minutes. Eggs need to be cooked to about 150 degrees Fahrenheit.
  • Carefully remove from the oven and sprinkle with shredded cheddar cheese and green onions.
  • Serve and enjoy!

Easy Overnight Breakfast Casserole

Easy Overnight Breakfast Casserole

Continuing with my super easy overnight breakfast recipes, I wanted to share this easy overnight breakfast casserole with you.   This recipe is probably the most versatile of all of the overnight breakfast recipes I have posted.  I used ham and cheddar jack cheese, but you can use whatever your favorite meat and cheese combination is.  You can even substitute vegetables instead of meat or veggies with meat.  Broccoli and spinach would both be great additions to this casserole.  My kids and husband love it and have no idea that I didn’t prepare the entire thing the morning I baked it.  In fact, I prepared it the night before while cleaning the kitchen from dinner.  This casserole has a great texture combination with the biscuits and potatoes.  It is very tasty and my family would love it at any meal.  So, get creative.  Make it your own and let me know hot you like it!
