Mexican Street Corn Dip.  Do you have a staple around your house that you just love?  You can add it to just about any entree and it just “fits”?  Well, for us, it is Mexican Street Corn.  So, I set out to make a dip that I could share more easily with everyone.  I have a great Mexican Street Corn recipe over here if you want to give it a try as well.

Making a dip out of your favorite dish is right up there with buying your favorite dress in every color available.  Not only do you get to enjoy it with your favorite bread, cracker, or veggies; you get to share it with all of your family and friends.  I love coming up with new ways to introduce my circle of family and friends to the things I love most.  This Mexican Street Corn Dip has quickly become something I love most!

I, initially set out to create a Mexican Street Corn salad, but it made a much better dip.  You could easily convert it to a salad by adding a few more veggies.  Maybe even serve it in a bed of lettuce with cilantro and tomatoes on top.  Yum, I’m getting hungry just thinking about it.  I might have to give it a try later.  Okay, okay, back to the dip recipe.  I used fresh corn for this recipe, but you could easily use drained, canned corn.  I also browned my corn in a skillet.  This can also be done in a 400 degree oven for about 15 minutes.  In case you prefer the oven.  Get to making and add what you like!  Have fun with it and let me know how you like it.

Mexican Street Corn Dip

Ingredients

  • 2 Tbsp Butter or Margarine
  • 1 Jalapeno Seeded and diced
  • 4 Stalks Fresh corn
  • 1/4 cup Mayonnaise
  • 1/4 cup Sour Cream
  • 1/4 cup Cotija Cheese Crumbled
  • 1/4 cup Fresh Cilantro leaves Chopped
  • 1 tsp Chili Powder
  • 2 Green Onions Chopped
  • 1 Lime Juiced

Instructions

  1. Melt butter in a large skillet over medium high heat. Add corn kernels and jalapeño.

  2. Cook, stirring occasionally, until cooked through and slightly charred, about 7-8 minutes. Be careful not to stir too often or you won't get the charred effect you need for the dip.

  3. Carefully remove the corn mixture from the heat and pour into a heat proof bowl. I use my pyrex bowl.

  4. Allow to cool to room temperature, then add the rest of the ingredients and give a good stir.

  5. Add a few onions and cheese on top to garnish and serve! It may be kept in the refrigerator for a bout 3-4 days.

  6. Serve with your favorite bread, cracker, or chip and enjoy!

Fun And Easy Edible Cookie Dough

Fun And Easy Edible Cookie Dough.  Do your kids beg for the cookie dough before you even get a chance to bake cookies?  Mine do all the time!  No matter how many times I tell them it has raw eggs in it; they still beg.

My son begs for this edible cookie dough, but to be honest, he cannot eat all of it.  I highly recommend that you half the recipe unless you are making this for a party or gathering.  This edible cookie dough is delicious, but after a scoop or two, the kiddos lose interest.  It will keep in the refrigerator for about a week.  You can even freeze it for up to 2 months if you like.  I make a full recipe and freeze half of it the day I make it.  This way I don’t need to make more the next time the kiddos get a craving.

  When their friends stop by, I fix them some of this edible cookie dough with a scoop of ice cream.  You can also make little edible cookie dough balls and add it to your favorite homemade ice cream recipe for a delicious cookie dough ice cream.  I use this super easy no-churn 2 ingredient ice cream recipe and add this edible cookie dough with it!  This Great Tasting Vanilla Extract In Your Instant Pot is also great for this recipe.  Give it a try and let me know what you think.

You can add a block of room temperature cream cheese before you add the chocolate chips and have a great dip!  Add some graham crackers and everyone will love it!  I have even added pecans to this as a dip and made a “cookie dough ball” for my daughter’s birthday party.  It was a huge hit!  Just get creative and have fun with it.  You’re kiddos will love you for it.

Ingredients

  • 1/2 Cup Brown Sugar packed
  • 4 Tbsp Salted Butter softened
  • 2 tsp Vanilla extract
  • 3 Tbsp Milk
  • 1 Cup All purpose flour Baked at 350 degrees for 5 minutes
  • 1/2 Cup Mini Chocolate Chips

Instructions

  1. Mix brown sugar, butter and vanilla extract in a large bow with an electric mixer until creamy.

  2. Add flour; mix until a crumbly dough forms.

  3. (For dip: mix in 8 oz of room temperature cream cheese here.)

  4. Mix in milk and chocolate chips with a rubber spatula or spoon.

  5. Serve room temperature.

Easy Instant Pot Apple Pepper Jelly.  We can find a great variety of peppers in the grocery store year ’round, but peak pepper season will be here before you know it and we will be looking for great recipes to use with all of these peppers.  This Instant Pot Apple Pepper Jelly recipe is a favorite around our house.

Are you a fan of pepper jelly like we are?  This pepper jelly keeps for months and is a great to put out when company is over.  You can pour it over cream cheese and serve with crackers for a beautiful snack or appetizer.  The heat in this recipe will really depend on the type of pepper you use.  This recipe calls for Jalapeno and bell peppers, but you can really use any type of pepper you like.

With summer around the corner, peppers will be everywhere!  You can make some of this pepper jelly and put it up for the winter.  Pepper Jelly makes great holiday gifts and tastes even better over cream cheese with crackers.  I make this recipe and take it to every function I go to.  It is always a hit and people are always impressed that I made it myself.  It also gives me the opportunity to talk about my Instant Pot, which is one of my favorite topics.

The easiest way we use pepper jelly most often is to just pour it over cream cheese and serve it on a tray with our favorite crackers.  Mixing the pepper jelly in cream cheese and serving it as a dip is also delish.  You can also glaze meat with it!  I have served it over fried shrimp with rice on the side and it tastes amazing!  Glazing chicken wings with it is another way my husband loves eating pepper jelly.  The possibilities are endless and, I’m sure, you’ll find your own favorite way to use this super easy and delicious recipe.

Easy Instant Pot Apple Pepper Jelly

Recipe should make 6 - 8 oz. canning jars that can be stored up to one year.

Ingredients

  • 1 Large Red Bell Pepper seeded and finely chopped
  • 1 Large Green Bell Pepper seeded and finely chopped
  • 4 whole Jalapeno Peppers seeded and chopped
  • 3/4 cup Apple Cider
  • 1/2 cup Apple Cider Vinegar
  • 3 cups Granulated Sugar
  • 1/2 tsp salt
  • 1 pkg Certo Fruit Pectin

Instructions

  1. Mix the red pepper, green pepper, and jalapeños with sugar and salt in the instant pot and let them sit for 30 minutes.

  2. Add the Apple cider and vinegar.

  3. Close instant pot and press pressure valve to the sealed position and set on manual for 2 minutes.

  4. Release pressure naturally for at 10-15 minutes then quick release and remove the top.

  5. Using a  hand mixer or a potato masher, mix/mash mixture until desired consistency.  I leave the pieces of pepper in my pepper jelly.  The peppers are soft and don't need to be mashed.  

  6. Turn Instant Pot to 'saute' function and allow the pepper jam to come to a simmer/boil.

  7. Add your pectin and stir to combine.

  8. Simmer for 2-3 minutes or until slightly thickened.

  9. Turn pot off and allow mixture to cool and then pour into jars.  ENJOY!

We are having friends over next weekend to watch the big game and I love to set out a great spread of easy to eat and easy to clean up foods.  This quick and easy Instant Pot buffalo chicken dip is one of my favorite go-to recipes when we have friends over.  It is also perfect for birthday parties and sleepovers.  My daughter’s friends beg for it!  I actually keep rotisserie chicken in my freezer just for times like this.  There’s no fuss and everything is ready in just a few minutes.  Plus, frozen rotisserie chickens are a snap to thaw.  Because they are already cooked, they thaw out in no time.  Even if your chicken is still a little bit frozen, it will heat up super fast once you put it in your Instant Pot.

Ingredients

  • 8 oz cream cheese room temp
  • 1/2 cup Louisiana Hot Sauce Sauce or your favorite wing sauce
  • 1/2 cup Sour Cream
  • 2 tsp garlic powder
  • 2 cups Cooked rotisserie chicken shredded
  • 1 1/2 cup Monterrey Jack Cheese shredded
  • 1/4 cup water
  • 1 IP Trivet

Instructions

  1. Using a medium bowl add cream cheese, hot sauce, sour cream, and garlic.

  2. Mix until well blended.

  3. Stir in the rotisserie chicken.

  4. Add 1/2 cup cheese, stirring until everything is well blended.

  5. Spoon into a Instant Pot baking dish.  Top with the rest of the cheese and cover with foil.

  6. Place a trivet at the bottom of your Instant Pot and add your water to the bottom of the Instant Pot.

  7. Place the buffalo chicken dip baking dish on top of your trivet in your Instant Pot.

  8. Set to manual for 7 minutes.  Natural release.

  9. Garnish with Louisiana Hot Sauce, and green onions.  ENJOY!

Ingredients

  • 1 1/2 cups Chopped Reese's Cups
  • 1/2 cup Creamy Peanut Butter
  • 1 cup Sweetened Condensed Milk
  • 1 cup Milk
  • 8 oz Whipped Topping
  • 1 3.4 oz box Vanilla Instant Pudding Mix

Instructions

  1. Chop all of the Reese's cups and set aside.

  2. In a medium mixing bowl, mix the creamy peanut butter and sweetened condensed milk until well blended. 

  3. Add the milk to the peanut butter mixture and mix on medium for about 2 minutes. 

  4. Add the pudding mix to the peanut butter mixture and mix until well blended. 

  5. Gently fold the whipped topping and 1 cup of chopped Reese's cups into the peanut butter mixture. 

  6. Transfer to a serving bowl and garnish with chocolate syrup and remaining chopped Reese's cups. 

  7. Allow to chill in the refrigerator for about 2 hours before serving.  Enjoy!

  • 12 oz Caramel Sauce Ice Cream Topping
  • 7 oz Marshmallow Cream

  2. Turn the mixer off and add caramel sauce.

How To Make Easy Peasy Caramel Apple Bites.  Do you love caramel apples, but hate the mess they make?  The fall is such a fun time to enjoy all of your favorite fall treats, but caramel apples always seem to make such a mess.  I’m going to show you how to make easy peasy Caramel Apple bites that will not mess up your day or night!

These Caramel Apple bites are so much fun and easy to make.  What’s even better is how versatile the recipe can be.  You can add peanuts, chocolate chips, white chocolate coating.  Really, the possibilities are endless!  I even coat the apples in two different ways.  I’ve even used my small crock pot to melt the caramel and made a fondue with the apple bites.  Gather your favorite toppings, invite some friends over, and have fun!

How To Make Easy Peasy Caramel Apple Bites

The ingredients and supplies for these Caramel Apple bites are so easy.  All you need is a package of caramel candy (I use the craft wrapped caramels) and apples.  You’ll also need melon baller (you can find these at your local Walmart or on Amazon) and toothpicks or wooden skewers.

Servings 12

Ingredients

  • 2 Medium Apples
  • 12 Caramel candy squares
  • 1 Tbsp water if you're melting the caramel
  • 24 toothpicks or skewers
  • 1 medium microwave safe bowl
  • Parchment Paper
  • Melon Baller
  • Rolling Pin

Instructions

  1. Using melon baller, make apple balls with each apple.  Be sure to press in deep to get a good round "ball" with the apple.  Each apple will make about 10-12 apple balls.  Set aside. 

For Dipping Caramel

  1. Unwrap the candy and place in microwave safe bowl with water and microwave on "defrost" for 3 minutes. 

  2. Carefully remove from the microwave and stir until well blended.  If there are still unmelted pieces, place back in the microwave on "defrost" for another minute, then stir.  

  3. Place a toothpick in the fleshy side of the apple, with the skin side down and carefully dip into the melted caramel and set aside on parchment paper.  

  4. After all of the apple balls are coated, place them in the refrigerator until ready to serve. 

For Wrapping Caramel

  1. Carefully cut all 12 pieces of candy in half with a sharp knife.  

  2. Place candy 2 inches apart on parchment paper and cover with another piece of parchment paper.

  3. Roll out candy until thin with rolling pin. 

  4. Place 1 piece of candy over each apple "ball" and stick toothpick through the top.  This way is much easier and less messy.

It’s football playoff time again!  Pretty soon the big game will be here.  If you’re like me, that’s the day of the year where we eat all fun party foods!  The food is one of the main reasons my husband and kids look forward to the big game!  This year I decided to try some new recipes.  Last year I did a bunch of crescent roll recipes, but this year I decided to change it up to smaller, more portable foods with a bigger variety of flavors.  As usual, Save-A-Lot helped me save BIG for the BIG game!  All total on all of these Big Game treats, I spent around $25!  YES!  TWENTY-FIVE DOLLARS!  What I bought could easily feed a crowd of 20 people, which puts the cost at a little over $1 per person.  The prices at each Save-A-Lot will vary by location, but I have shopped at 4 different locations and they have all been very similar in price.  Now, I’m going to show you just how easy it is to put on a super fun Big Game party on a budget with the help of Save-A-Lot.

First, I went shopping, obviously, at Save-A-Lot.  I am always in awe of how clean the Lake Charles, Louisiana, store is.  Their produce section is always fresh and looks great!  I found everything I needed for my Big Game shindig and now I was on my way home to start creating 😀

For the chicken n waffles, I used the Farmington brand original crispy strips then followed these steps:

  • Bake 6 chicken strips as directed on the package and cut each strip into 3 equal pieces.
  • Toast 4 Morning Delight Homestyle Waffles and cut each waffle into 4 equal pieces.
  • Place 1 piece of chicken on top of each waffle piece and pierced a toothpick through the middle.
  • Place on platter and drizzle with your favorite honey mustard sauce and Enjoy!

For the football brownies, I used the Ginger Evans chewy fudge brownie mix and Ginger Evans vanilla icing:

  • Prepare the brownies as directed on the package for a 13 X 9 inch pan.
  • Allow the brownies to cool and cut into 20 rectangles.
  • Remove the brownies from the pan, one by one, and place on a platter.
  • Using a pastry bag with a round piping attachment, draw the design of football “laces” down the middle of each brownie.
  • Serve and enjoy!

The strawberry shortcake kabobs were so stinkin’ easy and everyone LOVED them! I used America’s Choice sour cream cake, strawberries, and  Ginger Evans vanilla icing:

  • Rinse and dry 10 strawberries.
  • Cut the cap off (I made sure to cut all of the white part off to make them brighter)
  • Cut 3 – 2 inch slices of cake into four equal parts and place one piece onto a short kabob stick.
  • Next place a strawberry on the same kabob stick followed by a second piece of cake.
  • Lay the kabob down on a platter and pipe a decoration of vanilla icing onto the top of the kabob.  You can even use whipped cream if you prefer.
  • Serve and enjoy!

The cheese fries were super easy as well.  I used Wylwood crinkle cut fries and 2 oz of So cheezy melt (block cheese product):

  • Fry the crinkle cut fries as directed on the package and drain.
  • While the fries are cooking, place the cheese in a small microwave safe bowl and microwave on 50% for 4 minutes, stirring every minute.
  • Once the cheese is melted, add 1 Tbsp of milk to thin it out.
  • Place the fries in a cup and top with melted cheese.  You can even top with bacon, green onions, or any other great topping!
  • Serve and enjoy!

Y’all are going to LOVE how easy peasy this bacon cheeseball was and how much easier it can be!  I used Coburn Farms cream cheese and cheddar jack cheese for this recipe.  I also used Gwaltney bacon:

Gather 2 – 8 oz pkg of cream cheese (room temperature), 3 green onions (diced), 2 cups of cheddar jack cheese (shredded), and 1 pound of bacon (browned and drained).

  • Mix the cream cheese on medium speed for about 2 minutes.
  • Add the cheddar jack cheese, 1 cup at a time, to the cream cheese mixture while mixing on low.
  • Add the green onions to the cheese mixture while mixing on low.
  • Mix the cheese ball with a spoon and transfer to a covered bowl and place in the refrigerator for 2 hours.
  • While the cheese mixture is chilling, cook the bacon as directed on the package.
  • Allow the bacon to cool, then chop.
  • Remove the cheese from the refrigerator and place on wax paper and shape into a football.
  • Cover the cheese ball with the chopped bacon and press into the cheese ball until firm.
  • Serve with your favorite crackers and enjoy!

Football Ice Cream Sandwiches!  These were another easy peasy hit with my football fans.  I used World’s Fair ice cream sandwiches and the rest of that Ginger Evans vanilla icing:

  • Cut each ice cream sandwich in half to make two rectangles.
  • Insert popsicle stick into the end of each rectangle.
  • Create “laces” down the middle with the vanilla icing and a piping bag to replicate those on a football.
  • Serve and enjoy!

Y’all, these Easy Layered Skillet Nachos are so easy and your family is going to think you are a genius!  This is my go-to recipe when I don’t have time to cook a big supper, but I want something fun for the family.  It’s also a great recipe for game night or when you have unexpected company.  It can be ready in 20 minutes and looks fabulous.  You can really adapt it to what you have on-hand in your kitchen too.  I always have cheese and chili on hand.  Sometimes we use tortilla chips, but sometimes we use Fritos and call it “Frito Pie” LOL  The kids don’t care and they gobble it up either way.  You can really get creative with the toppings too.  I have added chopped chicken breast and ground beef to this recipe.  Guacamole or avocados are also a great addition along with a few wedges of lime to squeeze on it!  Have fun with it and make it your own!

Easy Layered Skillet Nachos

 

Gather your ingredients:

  • 1 bag of tortilla chips
  • 4 cups of your favorite chili, heated
  • 2 cups of shredded cheddar cheese
  • 1 tomato diced
  • 1/2 cup jalapeno slices
  • 3 green onions, diced
  • 1/2 cup sour cream

Get to layering:

  • Spread 1/2 bag of tortilla chips on bottom of iron skillet
  • drizzle 2 cups of chili on top of the tortilla chips
  • spread 1 cup of cheddar cheese on top of chili
  • Layer these three ingredients again
  • Place in oven, preheated to 350 degrees for 15-20 minutes (until cheese is melted)
  • Carefully remove from oven and add the rest of the ingredients.
  • Serve while warm and ENJOY!

This classic southern pimento cheese recipe is one from my childhood archives!  My grandmother made this every summer.  Although it will never taste just like it did when my grandmother made it; this one is pretty stinkin’ close.  I added a little flare to mine that you are welcome to use or simply leave out.  You can even use American cheese in place of cheddar cheese.  I’ve even seen it made with pepper jack cheese, YUM!  I may try that one day 🙂  This pimento cheese spread is also excellent over your favorite grilled burger.  If you’ve never tried that, you really should.  Just plop a big spoonful of pimento cheese on top of your burger right after it comes off the grill and that’s all you’ll need.

Gather your ingredients

  • 1 1/2 cups mayonnaise
  • 1 (4-oz.) jar diced pimientos, drained
  • 1 jalapeno seeded and diced
  • 16 oz Cheddar cheese, shredded (you can even use American cheese)
  • salt and pepper to taste

Get to mixing:

  • Mix all of the ingredients above and place in air tight container.  I love using Mason jars for my pimento cheese.  It will keep for about a week in the refrigerator 🙂
  • Let it sit in the refrigerator for about 2 hours before serving.  ENJOY!
