Mexican Street Corn Dip. Do you have a staple around your house that you just love? You can add it to just about any entree and it just “fits”? Well, for us, it is Mexican Street Corn. So, I set out to make a dip that I could share more easily with everyone. I have a great Mexican Street Corn recipe over here if you want to give it a try as well.
Making a dip out of your favorite dish is right up there with buying your favorite dress in every color available. Not only do you get to enjoy it with your favorite bread, cracker, or veggies; you get to share it with all of your family and friends. I love coming up with new ways to introduce my circle of family and friends to the things I love most. This Mexican Street Corn Dip has quickly become something I love most!
I, initially set out to create a Mexican Street Corn salad, but it made a much better dip. You could easily convert it to a salad by adding a few more veggies. Maybe even serve it in a bed of lettuce with cilantro and tomatoes on top. Yum, I’m getting hungry just thinking about it. I might have to give it a try later. Okay, okay, back to the dip recipe. I used fresh corn for this recipe, but you could easily use drained, canned corn. I also browned my corn in a skillet. This can also be done in a 400 degree oven for about 15 minutes. Fun And Easy Edible Cookie Dough. Do your kids beg for the cookie dough before you even get a chance to bake cookies? Mine do all the time! No matter how many times I tell them it has raw eggs in it; they still beg.
My son begs for this edible cookie dough, but to be honest, he cannot eat all of it. I highly recommend that you half the recipe unless you are making this for a party or gathering. This edible cookie dough is delicious, but after a scoop or two, the kiddos lose interest. It will keep in the refrigerator for about a week. You can even freeze it for up to 2 months if you like. I make a full recipe and freeze half of it the day I make it. This way I don’t need to make more the next time the kiddos get a craving.
When their friends stop by, I fix them some of this edible cookie dough with a scoop of ice cream. You can also make little edible cookie dough balls and add it to your favorite homemade ice cream recipe for a delicious cookie dough ice cream. Six Fun Ways To Save Big For Your Big Game Party #SwitchAndSave

It’s football playoff time again! Pretty soon the big game will be here. If you’re like me, that’s the day of the year where we eat all fun party foods! The food is one of the main reasons my husband and kids look forward to the big game! This year I decided to try some new recipes. Last year I did a bunch of crescent roll recipes, but this year I decided to change it up to smaller, more portable foods with a bigger variety of flavors. As usual, Save-A-Lot helped me save BIG for the BIG game! All total on all of these Big Game treats, I spent around $25! YES! TWENTY-FIVE DOLLARS! What I bought could easily feed a crowd of 20 people, which puts the cost at a little over $1 per person. The prices at each Save-A-Lot will vary by location, but I have shopped at 4 different locations and they have all been very similar in price. Now, I’m going to show you just how easy it is to put on a super fun Big Game party on a budget with the help of Save-A-Lot.
First, I went shopping, obviously, at Save-A-Lot. I am always in awe of how clean the Lake Charles, Louisiana, store is. Their produce section is always fresh and looks great! I found everything I needed for my Big Game shindig and now I was on my way home to start creating 😀
For the chicken n waffles, I used the Farmington brand original crispy strips then followed these steps:
Bake 6 chicken strips as directed on the package and cut each strip into 3 equal pieces.
Toast 4 Morning Delight Homestyle Waffles and cut each waffle into 4 equal pieces.
Place 1 piece of chicken on top of each waffle piece and pierced a toothpick through the middle.
Place on platter and drizzle with your favorite honey mustard sauce and Enjoy!
For the football brownies, I used the Ginger Evans chewy fudge brownie mix and Ginger Evans vanilla icing:
Prepare the brownies as directed on the package for a 13 X 9 inch pan.
Allow the brownies to cool and cut into 20 rectangles.
Remove the brownies from the pan, one by one, and place on a platter.
Using a pastry bag with a round piping attachment, draw the design of football “laces” down the middle of each brownie.
Serve and enjoy!
The strawberry shortcake kabobs were so stinkin’ easy and everyone LOVED them! I used America’s Choice sour cream cake, strawberries, and Ginger Evans vanilla icing:
Rinse and dry 10 strawberries.
Cut the cap off (I made sure to cut all of the white part off to make them brighter)
Cut 3 – 2 inch slices of cake into four equal parts and place one piece onto a short kabob stick.
Next place a strawberry on the same kabob stick followed by a second piece of cake.
Lay the kabob down on a platter and pipe a decoration of vanilla icing onto the top of the kabob. You can even use whipped cream if you prefer.
Serve and enjoy!
The cheese fries were super easy as well. I used Wylwood crinkle cut fries and 2 oz of So cheezy melt (block cheese product):
Fry the crinkle cut fries as directed on the package and drain.
While the fries are cooking, place the cheese in a small microwave safe bowl and microwave on 50% for 4 minutes, stirring every minute.
Once the cheese is melted, add 1 Tbsp of milk to thin it out.
Place the fries in a cup and top with melted cheese. You can even top with bacon, green onions, or any other great topping!
Serve and enjoy!
Y’all are going to LOVE how easy peasy this bacon cheeseball was and how much easier it can be! I used Coburn Farms cream cheese and cheddar jack cheese for this recipe. I also used Gwaltney bacon:
Gather 2 – 8 oz pkg of cream cheese (room temperature), 3 green onions (diced), 2 cups of cheddar jack cheese (shredded), and 1 pound of bacon (browned and drained).
Mix the cream cheese on medium speed for about 2 minutes.
Add the cheddar jack cheese, 1 cup at a time, to the cream cheese mixture while mixing on low.
Add the green onions to the cheese mixture while mixing on low.
Mix the cheese ball with a spoon and transfer to a covered bowl and place in the refrigerator for 2 hours.
While the cheese mixture is chilling, cook the bacon as directed on the package.
Allow the bacon to cool, then chop.
Remove the cheese from the refrigerator and place on wax paper and shape into a football.
Cover the cheese ball with the chopped bacon and press into the cheese ball until firm.
Serve with your favorite crackers and enjoy!
Football Ice Cream Sandwiches! These were another easy peasy hit with my football fans. I used World’s Fair ice cream sandwiches and the rest of that Ginger Evans vanilla icing:
Cut each ice cream sandwich in half to make two rectangles.
Insert popsicle stick into the end of each rectangle.
Create “laces” down the middle with the vanilla icing and a piping bag to replicate those on a football.
Serve and enjoy!

Y’all, these Easy Layered Skillet Nachos are so easy and your family is going to think you are a genius! This is my go-to recipe when I don’t have time to cook a big supper, but I want something fun for the family. It’s also a great recipe for game night or when you have unexpected company. It can be ready in 20 minutes and looks fabulous. You can really adapt it to what you have on-hand in your kitchen too. I always have cheese and chili on hand. Sometimes we use tortilla chips, but sometimes we use Fritos and call it “Frito Pie” LOL The kids don’t care and they gobble it up either way. You can really get creative with the toppings too. I have added chopped chicken breast and ground beef to this recipe. Guacamole or avocados are also a great addition along with a few wedges of lime to squeeze on it! Have fun with it and make it your own!
Gather your ingredients:
1 bag of tortilla chips
4 cups of your favorite chili, heated
2 cups of shredded cheddar cheese
1 tomato diced
1/2 cup jalapeno slices
3 green onions, diced
1/2 cup sour cream
Get to layering:
Spread 1/2 bag of tortilla chips on bottom of iron skillet
drizzle 2 cups of chili on top of the tortilla chips
spread 1 cup of cheddar cheese on top of chili
Layer these three ingredients again
Place in oven, preheated to 350 degrees for 15-20 minutes (until cheese is melted)
Carefully remove from oven and add the rest of the ingredients.
This classic southern pimento cheese recipe is one from my childhood archives! My grandmother made this every summer. Although it will never taste just like it did when my grandmother made it; this one is pretty stinkin’ close. I added a little flare to mine that you are welcome to use or simply leave out. You can even use American cheese in place of cheddar cheese. I’ve even seen it made with pepper jack cheese, YUM! I may try that one day 🙂 This pimento cheese spread is also excellent over your favorite grilled burger. If you’ve never tried that, you really should. Just plop a big spoonful of pimento cheese on top of your burger right after it comes off the grill and that’s all you’ll need.
Gather your ingredients
1 1/2 cups mayonnaise
1 (4-oz.) jar diced pimientos, drained
1 jalapeno seeded and diced
16 oz Cheddar cheese, shredded (you can even use American cheese)
salt and pepper to taste
Get to mixing:
Mix all of the ingredients above and place in air tight container. I love using Mason jars for my pimento cheese. It will keep for about a week in the refrigerator 🙂
Let it sit in the refrigerator for about 2 hours before serving. ENJOY!
