It is Mardi Gras season here in south Louisiana and we love tradition. This year is a little different with most of the Mardi Gras parades and celebrations cancelled, but that hasn’t stopped us from moving forward with our family celebrations. People of Louisiana celebrate with food and I am here for it!

Last year was our first year doing a “tour” of Mardi Gras parades. Finally, all 3 of our children were old enough to hang with us in the crowds of the Lafayette area Mardi Gras celebrations. We had so much fun and are a little sad we can’t do the same thing this year. Although this year will be different for so many people, it’s really not that different for our family. We usually choose to have small celebrations at our home as opposed to gathering in large crowds. Getting ready with great home cooked food is nothing new for our household and this year we are going all out!

Today I am making corn fritters or what some people call cornbread pancakes. No matter what you or your family call them, they taste amazing and are the perfect addition to this Cajun White Chili recipe.

This Cajun White Chili Recipe is not one that I make often, just because I forget about white beans. I get on a kick of cooking with red beans and black eyed peas and completely forget about all of the amazing white beans out there. Maybe sharing this great recipe with all of you will help me remember.

Why the Instant Pot?

I am mostly making this dish in my Instant Pot. If you haven’t gotten an Instant Pot yet, you really need to go ahead and make the investment. I bought my Instant Pot 5 years ago and am still using the same Instant Pot. By far, my favorite dish to cook in my Instant Pot is dry beans. They cook super fast and the texture is amazing. I never knew beans could have different texture, but beans in the Instant Pot have such a creamy texture and never seem to get over-cooked, no matter how long you cook them!

You can also make this recipe in your slow cooker or just on the stove top. Just cook your dried beans as you normally would and add the rest of the ingredients as this recipe calls for them. It still turns out amazingly. I hope you enjoy this recipe and share it with the people you love for years to come.

Easy Cajun White Chili In Your Instant Pot

Course Side Dish
Servings 5 people

Ingredients

  • 1/2 tsp Cayenne
  • 2 tsp Cumin
  • 1 tsp Oregano
  • 1 tsp Cilantro
  • 2 tsp Salt
  • 1 lb Dry white beans
  • 6 cups Chicken Broth
  • 1 Tbsp Sugar
  • 2 Tbsp Olive oil
  • 1 lb Cajun smoked sausage Cut into 1/2 inch pieces
  • 1 Onion diced
  • 1 Green Bell Pepper diced
  • 1 Red Bell Pepper diced
  • 1 Jalapeno Pepper seeded and diced
  • 1 Tbsp Minced garlic
  • 2 10 oz cans Diced tomatoes and green chilies
  • 1 cup Heavy cream

Instructions

  1. Add dry beans and broth (or water) to the Instant Pot. Cover, twist to lock the lid, and turn the valve to sealing. Press the Beans/Chili button (or set to 30 Minutes).

  2. While the beans are cooking, add oil to a 3 quart sauce pan or iron skillet and heat on medium high for 3 minutes.

  3. Once the oil is heated, add the onion, peppers, and smoked sausage and saute on medium-high until wilted or onions are clear.

  4. Add garlic and cook for an additional 5 minutes while stirring.

  5. When the timer beeps, carefully turn the valve to vent. Once the pressure is released, remove the lid from your Instant Pot.

  6. Add the sausage and pepper mixture, tomatoes and spices to the Instant Pot and replace the lid.

  7. Turn the lid to lock and turn the valve to sealing. Set manual at 5 minutes.

  8. When the timer beeps, allow to naturally release for 20 minutes.

  9. Turn valve to vent, remove lid and add heavy cream and give it a few stirs with a wooden spoon.

  10. Serve hot over rice or alone and Enjoy!

Sometimes I just fill them with cream cheese and strawberry preserves and put them out for them to eat in the mornings. I have even filled them with bacon, eggs, and cheese. The day I made these King Cake Bites, I didn’t have any yellow sprinkles, but I did have yellow food coloring. So, I used yellow icing and sprinkled it with purple and green sugar. Have fun with this recipe and celebrate Mardi Gras from home. It’s going to be a lot of fun planning Mardi Gras celebrations and learning how to have the most fun at home with the people in our circle.

Course Dessert

Ingredients

  • 1 8 oz block Cream cheese softened
  • 1 cup Confectioners sugar
  • 1 tsp Vanilla extract
  • 2 tsp Cinnamon
  • 2 cans Refrigerated crescent rolls 8 count

Glaze

  • 2 tbsp Milk
  • 1 Cup Confectioners sugar

Instructions

  1. Preheat oven to 350ºF

  2. Mix cream cheese, powdered sugar, cinnamon and vanilla extract with mixer until well blended.

  3. Roll our first can of dough onto parchment paper and scoop about 2 tbsp of cream cheese mixture onto the wide end of each triangle.

  4. Fold in bottom corners of the triangle over cream cheese mixture, then roll long side of triangle around to make a sealed pouch.

  5. Place crescent rolls on prepared baking sheet, seam side down.

  6. Bake 13 to 15 min. or until golden brown.

  7. Carefully remove the rolls from the oven an while they are cooling; mix together remaining powdered sugar and milk.

  8. Spread on top of King Cake Bites and sprinkle with colored sugars. Be sure to sprinkle the icing as soon as you spread the icing on the rolls. The icing begins to harden as it cools and the sprinkles will not stick.

Some solution appropriate for cleansing is pumped inside the colon by way of the anus via a small sized hose which will hardened fecal matter from intestinal walls and loosen up mucoid plaque. A large hose is afterward used to vacuum out the fecal waste matter and mixture of solution from the colon.

Have you ever made cookies from a boxed cake mix? I tried them a few years ago and have been hooked ever since! Don’t get me wrong; I still love making good old chocolate chip cookies from scratch, but cake mix cookies are super tasty as well! Plus it is so easy to incorporate different flavors you may not have tried with a traditional cookie recipe.

Cake mix cookies have a unique texture and taste. My whole family loves them, but I have friends who absolutely hate them. It’s usually a texture thing. If you’ve ever had the super soft cookies in the Walmart baker section or the bakery section of your local grocery store; that’s kind of what they taste like. They have a great flavor and are super soft. I have made cake mix cookies from, just about, every flavor of cake mix. I think my favorites were when I made them from a red velvet cake mix and topped them with a cream cheese frosting. You can really get creative, especially with Valentine’s Day and Easter just around the corner!

With all of the holiday thumbprint cookies I have seen over the last few months; I decided to try a version that would be well suited for Valentines Day. They turned out amazingly. All 3 of the kiddos and my hubby loved them, so I knew I needed to share the recipe with all of you.

I wasn’t so sure about using a strawberry cake mix. Strawberry cake mix tends to have a really strong strawberry flavor. When you’re making cookies from cake mix, that flavor gets even more intense. But I moved forward with my plan and made the strawberry cake mix cookies. Every one loves them! My son loved them the most. He liked them so much that he made a special trip to his girlfriend’s house just to deliver her a few. Of course, we all know that was a ploy to see her LOL

The cool thing about this recipe is that it can be changed up so easily. You can substitute your favorite cake mix flavor and create these for any occasion or holiday. I plan on using a lemon cake mix with white chocolate kisses for Easter. I’ll let y’all know how that turns out!

Chocolate Covered Strawberry Blossom Cake Mix Cookies

Strawberry and chocolate cookies from box cake mix

Ingredients

  • 1 box Cake Mix Strawberry
  • 2 large Eggs
  • 1/3 cup vegetable oil
  • 2 tbsp Sugar I used granulated and Red decorators sugar
  • 20 unwrapped Hershey Kisses or other chocolate candy

Instructions

  1. Preheat oven to 375 degrees F

  2. Dump cake mix, oil, and eggs into mixing bowl.

  3. Mix ingredients with a spoon until well blended.

  4. Scoop mix out with a cookie scoop or spoon (about 2 tbsp).

  5. Roll into a ball, then roll in sugar.

  6. Place on greased baking sheet and carefully place in preheated oven for 8-10 minutes or until the edges start turning golden. Be sure not to over cook or it will change the color of the pink/red.

  7. Carefully remove the cookies from the oven and immediately press the unwrapped chocolate candies into the top of the cookies. This needs to be done while the cookies are still warm or they will not stick.

  8. Allow the cookies to cool for 2 hours and serve.

  9. Enjoy!

We have muddy buddies for every occasion and holiday. I decided to share the Muddy Buddy recipe I have been using since my teenagers were tiny. They are always a hit and super easy to make.

I know a lot of you are probably intimidated by using melting chocolates or candy melts, but please do not be! This is one of the easiest ways to dip your toes into something new. The melting chocolate doesn’t have to be perfect and everyone will love it even if you goof it up a little.

Course Dessert

Ingredients

  • 1/2 cup Red chocolate melts
  • 1/2 cup Pink chocolate melts
  • 1/2 cup White chocolate chips
  • 3 tsp Vegetable shortening
  • 3 cups Corn or Rice chex cereal I used generic
  • 1/2 cup Valentines M&M candies
  • 6 Tbsp Confectioners sugar

Instructions

  1. Place candy melts in 3 separate microwave-proof containers and microwave each one on High, for 20 seconds at a time until melted, stirring in between cooking times.

  2. Place 1 cup of cereal in a small mixing bowl.

  3. Add 2 Tbsp of Confectioners sugar each, to 3 separate quart size zipper bags.

  4. Mix in 1 tsp of shortening with melted pink chocolate and stir until smooth.

  5. Pour melted chocolate over the 1 cup of cereal and stir until all cereal is coated.

  6. Quickly spoon the candy-coated mixture into one of the zipper bags, seal and shake. Shake until all of the cereal is coated.

  7. Pour the candy onto a parchment lined baking sheet to dry.

  8. Repeat steps 2-7 with the white and red candy coating.

  9. Allow all of the candy coated cereal to dry for 2 hours.

  10. Pour into a large serving bowl and toss with M&M's.

  11. Enjoy!

* Rouses

I just want to clear a few things up; I will no longer be posting Rouses Markets in my weekly grocery prices.  I am extremely disappointed that one of the owners chose to participate in the activities that led to the violent attack on the capitol building of our great country on Wednesday.  

My husband is a disabled veteran and I come from a long line of veterans. I know some people are already saying that my little blog will not matter to Rouses, and these people are absolutely right.  But make no mistake, my actions make all the difference to my children and husband.  My actions, or lack thereof, make a huge impact on my family and community. 

I did not come to this decision because I want to hurt Rouses.  I hope that everyone who chooses to, will continue to support them.  I am not calling on anyone to follow me. I came to this decision because I want to help heal my great country. I saw what Wednesday’s events did to my children, my family, my friends, and my community.  If my family and community are hurting, I cannot stand by and endorse the people who are hurting them.  Yes, I realize this will cost me quite a few followers. I have made peace with that. 

I am also not posting this here for attention.  I don’t need nor want attention. I am posting this here for 2 reasons:

1. I want to make it clear where I stand on this. 

2. I have been asked, by several of my amazingly loyal readers, where the Rouses prices are. 

I hope and pray that our country will heal from this.  I apologize for any inconvenience this may cause my readers. But rest assured, I will replace Rouses with other great local grocery stores who have great prices and could really use our business right now.  Have a great day and God bless ❤🇺🇲

If you are a fan of Mounds and Almond Joy, then you are going to LOVE these Easy Homemade Mounds Bars! These are so, super easy to make and taste amazing. If you prefer Almond Joy to Mounds, then all you have to do is put a few toasted almonds between the layer of condensed milk and chocolate. You can thank me later.

I have always loved Mounds and Almond Joy candy bars. No one else in my family really cares too much for them, so I always get my fill during holidays, especially Halloween! I go straight for these candies and take them before their friends take off with them. With two teenagers in the house, sometimes it’s a race to the chocolate.

I know almonds are a great add in, but now I’m wondering if maybe some dry fruit would be good to top the coconut and give an extra layer between the coconut and chocolate. Course Dessert

Ingredients

  • 13 planks Graham crackers 1 1/2 packs
  • 3 Tbsp Granulated sugar
  • 1 stick unsalted butter melted
  • 14 oz Sweetened flake coconut
  • 14 oz Sweetened condensed milk
  • 12 oz Semi-sweet chocolate chips
  • 2 Tbsp Vegetable shortening

Instructions

  1. Preheat oven to 350 degrees.

  2. Crush graham crackers into a fine consistency, add sugar and melted butter. I usually crush my graham crackers in a gallon size ziplock bag and add the sugar and butter to the bag and mix in the bag. You can also use a food processor or blender.

  3. Press the graham cracker mixture into the bottom of the 8 in X 8 in pan and place in the preheated oven for 15 minutes. I like to line the pan with aluminum foil and spray with non-stick cooking spray. This allows you to easily remove and cut the bars.

  4. Carefully remove the pan from the oven and spread the coconut over the graham cracker mixture.

  5. Pour the sweetened condensed milk over the top of the coconut.

  6. Place the pan back in the oven for 15 minutes.

  7. While the pan is baking, place the chocolate chips in the microwave for 30 seconds at a time until the chips are melted. Be sure to mix in between cooking times.

  8. Once the chocolate chips are melted, add the vegetable shortening to the warm chocolate chips and stir until melted and blended well.

  9. Carefully remove the pan from the oven and pour the chocolate mixture over the top of the coconut mixture.

  10. Allow to cool for about an hour, then place in the refrigerator until set.

  11. Remove from the refrigerator, cut into small bars, and serve.

  12. Enjoy!
