This sweet and spicy candied bacon recipe will become a favorite for your family.  It is great for parties, family gatherings, even great Christmas gifts.  You can package and box them for a great teacher gift or Christmas gift.  You can easily personalize this recipe and make it what you love.  During the holidays, I add cinnamon and pecans to the brown sugar mixture.  It tastes amazing!

One thing that is important when you make this candied bacon is to let it cook.  Let it get brown.  I usually set my timer for 30 minutes to check the bacon.  If it’s not good and brown, then I set it for another 5 minutes and so on.  You want the sugar to caramelize on the bacon and you don’t want soft bacon.  You also don’t want to burn it.  Over-cooking is okay, just not burned.  Play around with it and see what works for you.  You can even add pecans to make a praline candied bacon, YUM!

Ingredients

  • 1 1/2 pounds thick cut bacon
  • 1/2 cup brown sugar
  • 1 pinch cayenne pepper
  • 1/4 cup maple syrup
  • 1 tsp chili powder

Instructions

  1. Preheat oven to 350 degrees.

  2. Mix brown sugar, cayenne pepper, and chili powder together in a mixing bowl.  Add maple syrup and mix until well blended.  

  3. Lay bacon strips out flat on cookie sheets that have been sprayed with non-stick cooking spray.  I line mine with foil, then spray with non-stick cooking spray.

  4. Spread 1 T of brown sugar mixture over each strip of bacon (there are usually about 12-15 strips in 1 1/2 pounds of thick cut bacon).

  5. Distribute leftover brown sugar mixture over each piece of bacon then press the brown sugar mixture into the bacon with your hands.  

  6. Carefully place cookie sheets with bacon into the preheated oven for 30-40 minutes.  I set my timer for 30 minutes and check the bacon.  If it's not done, I set the timer for another 5 minutes and repeat until the bacon is done.  You'll know it's done when it's nice and brown.  

  7. Carefully remove the cookie sheets from the oven and immediately transfer the slices of bacon onto parchment paper and allow to cool.

We love bacon around our house, but we only cook it a few times a year.  With baking season upon us, it’s time to break out the bacon and get to cookin’!  One favorite recipe around here is bacon jam.  Bacon jam is a great topping to so many dishes, which makes it the perfect addition to any recipe collection. Most often, we eat bacon jam on toast.  I also add it to a lot of dishes, especially when it has been in the fridge for about a week.  Just today, I added about 1/4 cup of bacon jam to my favorite black eyed peas and sausage recipe.

My recipe calls for just  a pinch of cayenne pepper.  If you like spicier food, you can definitely add more pepper.  To get the strong coffee that my recipe calls for, I add 1 tsp of instant coffee to leftover coffee from my husband’s morning coffee.  The bacon, maple syrup and coffee flavors in this recipe are definitely going to make it a favorite around your house!  This Bacon Jam will keep in your fridge for about 10 days.

Servings 12

Ingredients

  • 1 1/2 Pounds Bacon chopped
  • 3 medium Onions diced
  • 4 T Maple syrup
  • 1/4 cup Apple cider vinegar
  • 1 T Garlic diced
  • 1/2 Cup Bown sugar packed
  • 1/2 tsp Chili powder
  • 1 Pinch Cayenne pepper
  • 1/2 cup Strong brewed coffee

Instructions

  1. Cook bacon on medium high until bacon is browned, then drain off all of the grease and set the bacon aside.  (I use an iron skillet)

  2. Cook onions and garlic in same pan as the bacon on medium high until onions are gently caramelized.  

  3. Add bacon, coffee,  maple syrup, brown sugar, chili powder, cayenne pepper, and apple cider vinegar to the onion mixture.

  4. Turn down to medium low and let simmer for 45 minutes while stirring occasionally.

Servings 5 People

Ingredients

  • 1 Tbsp Sesame Oil
  • 16 oz boneless Seven Steak thinly sliced
  • 2 tsp ginger
  • 2 tsp minced garlic
  • 2 Tbsp Corn Starch
  • 1/4 cup brown sugar
  • 1/4 cup soy sauce
  • 1/4 cup beef broth
  • 1 tsp red pepper flakes
  • 1 Red bell pepper thinly sliced
  • 4 Green Onions sliced, with green and white parts
  • 2 heads Fresh broccoli

Instructions

  1. Add Sesame Oil to Instant Pot and turn on to sautee setting.

  2. Add steak garlic, and ginger and sautee for 5 minutes.

  3. Sprinkle corn starch on steak mixture and toss with spoon.

  4. Add next 6 ingredients in order and lock Instant Pot lid in place.

  5. Set Instant Pot to manual 7 minutes.  

  6. Allow to naturally release for 5 minutes, then manually release.

  7. Carefully remove lid from Instant Pot.  Serve over rice and enjoy!

As much as I love this dish, it is just my favorite and most simple alfredo sauce with dried tomatoes, spinach, chicken, and penne pasta added to it.  You are going to absolutely love the end result of this recipe.  Not only is it super easy peasy to make, but it will be finished in a flash and tastes amazing!  All three of my kiddos and even my husband loved it.  They even ate the spinach!  One of my kiddos picked out the tomatoes, and I am totally okay with that.

Easy Cheesy Creamy Greek Instant Pot Penne Pasta

This delicious recipe was inspired by one of my favorite pasta dishes served at a local Greek restaurant here in Acadiana!  I hope you love it as much as we do 🙂

Servings 8

Ingredients

  • 4 tbsp butter
  • 2 boneless skinless chicken breasts (cut into 1 inch pieces)
  • 2 tsp minced garlic
  • 16 oz Penne
  • 2 cans Chicken broth
  • 3 cups half and half
  • 1 tsp salt
  • 1 cup fresh grated Parmesan cheese
  • 1 cup frozen chopped spinach
  • 3 oz sun dried tomatoes

Instructions

  1. Set your Instant Pot to sautee and allow to heat up for about a minute.

  2. Melt butter in Instant Pot liner.  

  3. Add chicken and garlic to butter and saute until the outside of the chicken is white.  

  4. Cancel the saute on your Instant Pot and layer the pasta, chicken broth, half and half, salt, tomatoes, and spinach (in that order).  

  5. Seal the lid on your Instant Pot and set to manual for 7 minutes.  

  6. Once your Instant Pot beeps, allow natural release for 15 minutes, before manual release.  

  7. Once all of the pressure has been released, carefully remove the lid and mix in your Parmesan cheese.   

  8. Allow to set for 5 minutes before serving.  Serve hot and enjoy!

This recipe for Instant Pot refried beans is the product of a few trial runs.  I finally got it perfect for our taste and for adding to all of your favorite recipes.  Refried beans are a staple in many Mexican dishes.  With Cinco de Mayo being right around the corner, I figured this was the best time to get it right!  Put a little cheese on top and, voila, you have a great cheesy bean dip!

If you don’t have an Instant Pot yet, now is the time to get one.  Start dropping hints that you want one, since Mother’s Day is also just around the corner.  If you have never cooked beans in your Instant Pot, now is the time to give it a try.  Beans are my favorite food to cook in my Instant Pot.  The come out perfectly every single time.  From dried to cooked perfection in just 50 minutes.

Ingredients

  • 1 lb dried pinto beans
  • 8 cups water
  • 1 onion
  • 2 tsp minced garlic
  • 8 oz bacon or hog jowl
  • 4 tsp salt
  • 1/4 cup margarine

Instructions

  1. Place the first 5 ingredients in your Instant Pot with 2 tsp of salt.

  2. Place lid on Instant Pot, close vent, and press beans/chili setting.

  3. Once the beans are finished cooking, allow to naturally release for 20 minutes, then quick release.

  4. Once all of the pressure has released, carefully open the lid and dip out bacon or hog jowl. 

  5. Drain beans, keeping onions with the beans.

  6. Place beans back in Instant Pot liner, add 2 tsp salt, and mash with potato masher.  I mash the onions with them as they will be very soft and add a great flavor. 

  7. After the beans are all mashed up, add 1/4 cup margarine to 3 quart sauce pan and melt on medium/high heat.

  8. Add beans to sauce pan and mix over medium high heat until well blended.  

  9. Now your beans are ready to serve!  I usually add about 1/4 cup of water to the mixture to keep the beans from getting to dry before they are used.

Instant Pot Bread Pudding With Rum Sauce.  Have you ever thought of making bread pudding in your Instant Pot?  Well, I have and I did just that!  It turned out amazing and was so fast and easy.

This bread pudding with rum sauce was just as rich and moist as my favorite bread pudding that I make the “old fashioned way”.  Living in south Louisiana, bread pudding is a staple to any great meal.  I love making it for breakfast, dessert, or just because.  You will see, bread pudding is a great way to get the family to gather around the kitchen table and see what is cooking!  What I love most about this recipe is that you can get everything ready the night before and just stick it in your Instant Pot in the morning to cook while you’re getting ready for your day!

Instant Pot Bread Pudding With Rum Sauce

One piece of advice I will give for anyone before they start cooking desserts in their Instant Pot is to sanitize your pot, especially the rubber ring, before you cook them.  If you have been cooking dinner in your instant pot for a while, you will find that it has, likely, been hanging onto those flavors you have been cooking in it.  My friend, Carla, over at Adventures of A Nurse has some great tips on How To Clean Your Instant Pot.  If you are able to, get two Instant Pots and have one of them dedicated just for desserts.

You can use any kind of bread you prefer for this recipe.  I prefer a baguette because it gives a great soft, chewy consistency when used in bread pudding.  I have made bread pudding using French bread and even cinnamon rolls before.  Get creative and make it your own.  Let me know how you modified the recipe in the comments below.  I love trying new spins on my old favorites.

Instant Pot Bread Pudding With Rum Sauce

Servings 8

Ingredients

Bread Pudding

  • 3/4 cup sugar
  • 2 1/4 cups evaporated milk
  • 5 large eggs
  • 2 tsp vanilla extract
  • 2 tsp pumpkin pie spice
  • 1 loaf Baguette sliced
  • 1/2 stick butter

Drizzle Sauce

  • 1/2 stick butter
  • 1/3 cup brown sugar
  • 1 tsp rum extract

Instructions

  1. Mix first 5 ingredients in large mixing bowl. 

  2. Add bread and press down until bread is completely covered by mixture.


  3. Soak for an hour in the refrigerator.


  4. Spray your Instant Pot with cooking spray and pour in the mixture.


  5. Slice butter and place around top of mixture in pot.


  6. Close the lid of your Instant Pot, press the Multigrain function and adjust to 35 minutes.


  7. Open the lid of your Instant Pot and check the inside of the bread. If it's moist, it's done! If it's still too wet, close the Instant Pot and cook again for 5 minutes.


  8. Once the bread pudding is fully cooked, turn off the Instant Pot and let cool.


  9. Drizzle Sauce

    Place a pot on medium heat on the stove. Add the butter, sugar, and rum extract. 


  10. Heat and stir until fully melted and thickened, about 5 - 8 minutes.
  11. Cut the bread pudding into 8 pieces and then drizzle the sauce over each piece. Serve.

This Instant Pot Pizza Pasta Bake In 20 Minutes is perfect for school nights when you just don’t have time for an hour long meal prep.  The meat for this meal can be prepared ahead of time.  As a matter of fact, I recommend you brown your ground beef and keep it in the freezer until you’re ready to use it.

My kids absolutely love this Instant Pot Pizza Pasta Bake and I love that it’s ready to eat in 20 minutes.  I will let you know up front that I did not include the prep time for browning the ground beef.  I like to brown my ground beef on the weekends and freeze it.  This makes it perfect for adding to any of my favorite Instant Pot recipes.

This is a quick and easy recipe that is perfect for school nights!

Prep Time 15 minutes
Cook Time 13 minutes
Total Time 28 minutes
Servings 8

Ingredients

  • 2 lb Ground beef browned
  • 1/2 yellow onion thinly sliced
  • 1/2 green bell pepper thinly sliced
  • 1 tsp garlic minced
  • 48 oz Your favorite marinara sauce
  • 4 cups water
  • 16 oz Rotini pasta (uncooked)
  • 2 cups mozzarella cheese
  • 5 oz pepperoni

Instructions

  1. Add the first 7 ingredients to the Instant Pot liner.

  2. Stir to combine.

  3. Place lid on Instant Pot and lock.

  4. Set Instant Pot to manual for 8 minutes.

  5. Use quick release, then carefully stir the pasta and sauce.

  6. Carefully pour the pasta and sauce into a 3-4 quart baking pan. 

  7. Sprinkle with Mozzarella cheese and pepperoni.  

  8. Place directly in an oven preheated to 450 degrees for 5 minutes.

  9. Carefully remove pan from oven.  Serve while hot and enjoy!

I made this Instant Pot dirty rice a few times before I got the perfect flavor.  Now, this is not “authentic” Cajun dirty rice.  Authentic Cajun dirty rice has chopped liver in it and I’m just not a fan of that flavor, so I left that part out.  I added some bacon and breakfast sausage to give it extra flavor.  This turns out AMAZING!  My kiddos and husband beg for me to make it, so it has become a staple on our dining room table.  Hopefully, you’ll fall in love with it too.  Let me know what you think of it and how you change it up!  I’m always looking for new, great ideas for my Instant Pot.

Dirty rice is a must for any Cajun table and this recipe will WOW even the toughest food critic.  Dirty rice is great for serving along side BBQ, Thanksgiving dinner, or all by itself.  We eat it by itself or with baked beans and French bread most often.  Not only is it delicious, but it is wholesome and very inexpensive!  This is a “beans and rice” meal that the whole family can love.

Ingredients

  • 4 oz Bacon chopped
  • 1 lb Breakfast Sausage
  • 1 Medium Onion chopped
  • 1 rib Celery chopped
  • 1/2 Bell Pepper chopped
  • 1 Tbsp Garlic chopped
  • 2 tsp Cajun seasoning
  • 1 Bay leaf
  • 1/2 tsp Dried Thyme
  • 1 Can Chicken Broth 14 oz
  • 1 1/2 Cups Long Grain Rice
  • 1 Tbsp Soy Sauce
  • 1 Tbsp Worcestershire Sauce

Instructions

  1. Set your Instant Pot to Saute and toss in the first 6 ingredients.

  2. Saute in Instant Pot until the onions are clear (about 10 minutes). Make sure you stir about every 2 minutes.


  3. Pour in the rest of the ingredients and give it a stir.


  4. Set your Instant pot to Manual (high) for 15 minutes. Seal the lid and let it cook!


  5. Once the time is up, let it naturally release for about 10 minutes, then you can quick release. When I'm cooking rice in my Instant Pot, I like it to release naturally as long as I can just to make sure the rice has had time to absorb all of the moisture.


  6. Remove the bay leaf and serve hot!

I’m going to give this disclosure before sharing how we made this slime.  It is messy and sticky.  All slime is messy and sticky.  This was not any messier than other slime we have made, but it was definitely stickier.  Adding more oil and sugar helps with the stickiness.  I was amazed at how many different colors and flavors of PEEPS nd Chicks are out this year.  There. Are. So. Many.

Now, to make the slime!

Gather your supplies:

  • 6 PEEPS or Chicks
  • 1 Tablespoon of vegetable oil
  • 1/4 cup Tablespoons of powdered sugar

Get to making:

  • Okay, here’s the fun part.  You’re going to start by putting the PEEPS or Chicks in a microwave-safe bowl and microwaving on high for 20 seconds.  The PEEPS should puff up when they get heated.
  • Carefully remove the bowl from the microwave and pour the tablespoon of oil onto the candy and stir.
  • Roll the greasy, sticky mess (LOL) in the powdered sugar and start pulling until it is the desired consistency.  Hannah would pull the slime then dip again, until it was perfect.  It did get to  a great consistency she could pull and play with.  Then she ate it!

We have tried other frozen family dinners and, honestly, they just take too long to prepare.

I picked up Bertolli family size Chicken Parmigiana & Penne this weekend to give it a try. The meal took exactly 10 minutes to prepare and my whole family loved it! I followed the directions to a “T” and it was perfect. There is nothing I would add or take away from the meal. We were in such a rush all weekend as well, that I didn’t even get to try some experimental toppings or sides. I put the chicken parmigiana on the stove, bread in the oven, and that was that!

I am excited to try some of the other Bertolli family meals as well. The Chicken Broccoli Fettuccine Alfredo and Chicken Florentine and Farfalle looked amazing! Next week will be the week to try both of those. After I bought frozen garlic bread and salad fixin’s, I spent around $15 for dinner for my family of 5. I’d say that’s quite a bargain, especially since it tasted delicious and was ready to eat in less than 15 minutes! To top it off, Bertolli chicken parmigiana and penne is made with white-meat chicken, al dente penne and real Mozzarella cheese FOR THE WIN!
