Easy Creamy Instant Pot Broccoli And Cheese Soup. Are you obsessed with your Instant Pot yet? I have been for a couple of years now. One of my favorite meals to make in my Instant Pot is this easy creamy Instant Pot broccoli and cheese soup. Why, you ask? One of the biggest draws for this recipe is that it only takes 2 minutes for broccoli to cook in the Instant Pot. You read that right….just 2 minutes!

I’m not one of those moms who feeds their children healthy food all of the time or even most of the time. Most of the time, healthy food is available, but bad choices are usually made. However, putting broccoli in their dinner makes me feel a smidgen better. One of the easiest ways to cook broccoli is in the Instant Pot. You can have fresh broccoli done and super tender in just 2 minutes and if you want your broccoli a little more crisp, then you can get it done in 1 minute with quick release. I love to put in a half cup of chicken broth and toss in the broccoli. My Instant Pot does it’s thing. You can do a quick release and serve with butter or cheese, or both! My kids love it and I feel good that they’re getting their veggies.
This recipe combines two of our favorite foods; broccoli and cheese. Most of this soup doesn’t even have to be cooked, it just needs to be melted. This is easily achieved by adding the cheese and cream to the hot Instant Pot liner with the broccoli and giving it a stir. This soup really is just that easy and you are going to fall in love with how amazing it tastes with just a little bit of work.

Easy Creamy Instant Pot Broccoli And Cheese Soup
Ingredients
- 2 Cups chicken broth
- 1 Medium Sweet Onion (Yellow or Vidalia) Chopped
- 3 tbsp Butter or Margarine
- 1 tbsp Vegetable oil
- 1 lb Broccoli Florets (about 5-6 cups)
- 2 tsp Minced Garlic
- 2 tsp salt
- 1 tsp black pepper
- 2 cups Monterey Jack Cheese shredded
- 1/2 cup Heavy Cream (whipping cream)
Instructions

Turn your Instant Pot on Sautee and melt butter in the liner.

Add flour to the butter and wisk until smooth.

Add the chicken broth, onion, broccoli, garlic, salt and pepper to the Instant Pot.

Cook on Manual (or pressure cook) HIGH for 2 minutes. Allow for a 2 minute Natural Pressure Release before releasing the pressure manually.

Carefully remove lid and stir in the heavy cream and cheeses.

Replace lid for 2 minutes to allow the cheese to melt.

Remove lid, give a quick stir, and serve hot!
