Best Biscuits EVER!
I tried for MANY years to find the perfect biscuit recipe. I stumbled upon a recipe using Sprite and sour cream and have since tweaked it to perfection 😀 Many of you know that I love cooking in my iron skillet; partly because of the taste and even cooking, but mostly because it makes me feel nostalgic LOL Well, these biscuits would be delicious cooked on any surface, but are definitely best baked in an iron skillet.
Gather your ingredients:
- 1/2 cup lemon-lime soda (Sprite, 7 UP)
- 1/2 cup sour cream
- 3 cups biscuit mix (You can use Bisquick, Pioneer, or make your own. My recipe for biscuit mixÂ
- 1/2 stick of butter or margarine
Get to cookin’:
Preheat your oven to 400 degrees. Mix all the ingredients with a wooden spoon(you can use the pastry hook on your mixer also) until moist. After you finish mixing the dough; start melting the butter in your iron skillet. Place 1/4 cup flour on a flat surface. I just use my counter top, but you can use a chopping block or whatever you have handy. Pat out the dough until about 3/4 inch thickness and cut with a biscuit cutter. I also use a glass from the pantry when I can’t find my biscuit cutter 😀 As you cut out each biscuit, dip it in the butter in the iron skillet then flip it over and drop it in the skillet. Both sides of the biscuit should be coated in melted butter. Continue this until the skilled it full of biscuits. Carefully place the biscuits in the oven for 15-20 minutes or until golden brown on the top. Remove the biscuits from the oven very carefully and enjoy! My kids request these at least once a week 😀 You will LOVE them too, I’m sure!
