These No-Bake Chocolate Ritz Cracker Cookies are a crowd favorite around our house during the holidays. We love baking and candy making for Thanksgiving and Christmas. These No-Bake Chocolate Ritz Cracker cookies are always on the top of my list. My kids love helping me make them and their friends love eating them!

No-Bake Chocolate Ritz Cracker Cookies

With the Christmas season comes a lot of family and friends gathering. Not only do we love making goodies for our friends at our house, we also enjoy making gift tins of cookies and candies for our neighbors, teachers, and coaches. These No-Bake Chocolate Ritz cracker cookies are super easy to make and there is an abundance of the ingredients when it gets close to the holidays.

No-Bake Chocolate Ritz Cracker Cookies

Some people make these with peanut butter and powdered sugar and some like to fully cover the cookies in chocolate. You can really be as creative as you want with a recipe like this. We like to only cover half of the cookie in chocolate because it keeps them crispy and peanut-buttery! I’ve even seen some recipes where they are covered in white almond bark. Have fun with it and make it your own. Do what your family loves the most!

No-Bake Chocolate Ritz Cracker Cookies

Gather your ingredients:

  • 2 sleeves of Ritz or buttery golden round crackers
  • 3/4 cup creamy peanut butter
  • 1/2 cup marshmallow creme
  • 12 oz chocolate candy coating or chocolate almond bark
  • Holiday sprinkles (optional)

Get to cooking:

  • Line a baking sheet with parchment paper or aluminum foil
  • Open your crackers and lay on baking sheet
  • In a medium bowl, add the peanut butter, marshmallow creme, and stir until well combined.
  • Evenly spread a thin (not paper thin, but not too thick either) layer of the peanut butter-marshmallow mixture on half of the crackers on the baking sheet.
  • Top with the remaining crackers, creating sandwiches; set aside.
  • In a medium microwave-safe bowl, add the chopped chocolate and heat on high power in 30 second increments, stirring after each time, until chocolate can be stirred smooth.
  • Dip each cookie into the chocolate using one or two forks, allowing the excess to drip off. You can coat half or the whole cookie.
  • Place dipped cookies on baking sheet.
  • Add sprinkles, to taste.
  • Place baking sheet in the fridge or freezer until chocolate has hardened before serving.
