You know me, I’m always looking for a way to save a dollar here or there. Making these strawberry cheesecake cookie bars when strawberries are in season is one way to do just that! Strawberries are harvest, in Louisiana, from February through May.

Storing cream cheese in the freezer for 6 months from December to May and buying strawberries in bulk will help you overlap and get through strawberry season with lots of cream cheese on hand! Easy Strawberry Cheesecake Cookie Bars

Course Dessert

Ingredients

Cookies

  • 1 cup butter softened
  • 3/4 cup granulated (white) sugar
  • 1/4 cup packed light brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3 cups all purpose flour
  • 1/2 cup fresh strawberries diced

Filling

  • 6 oz cream cheese softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Spray 9 inch square baking pan with non-stick cooking spray and preheat oven to 350 degrees.

  2. Combine together flour, salt, and baking soda in small mixing bowl and set aside.

  3. In the bowl of a handheld mixer or standing mixer, mix the butter and sugars together until light and fluffy (about 1-2 minutes). Mix in the egg and vanilla extract.

  4. Add in the flour, salt, and baking soda, mixture to the butter mixture and mix until just combined (don't over-mix).

  5. Gently fold strawberries into the batter. You don't want to mix them in too much or they'll lose their shape and the color will bleed into the dough.

  6. In a small bowl, use a mixer to mix the cream cheese with powdered sugar and vanilla extract until smooth and combined.

  7. Press half of the batter into the bottom of the prepared pan.

  8. Spread the cream cheese mixture evenly over the batter in the pan.

  9. Gently press out the second half of the batter with your hands and lay it on top of the cream cheese mixture until it covers the whole pan.

  10. Place pan in the preheated oven and bake for 25-27 minutes or until the top is golden all over.

  11. Carefully remove the cookie bars from the oven and allow cool for 30 minutes, then place in the refrigerator for an hour before cutting.

  12. Cut into 2 inch squares and serve. Enjoy!
