Easy And Delicious Instant Pot Tomato SoupAs with many of my favorite recipes; one of my favorite features of this Easy And Delicious Instant Pot Tomato Soup is it’s versatility.  You can dress it up or down as much as you like.  You can add vegetables or your meat of choice to bulk it up and make a whole new meal for your family.  Making homemade croutons gives a great, elegant feel to this soup as well.  Know that, because you are using fresh ingredients, this soup will not be as red as you may be accustomed to with store-bought tomato soup.  You will get a much better flavor, though, that cannot be matched in canned soup.

Cheese is a great companion to all things tomato.  My kiddos love it when I top their soup with their favorite cheese.  Using mozzarella or Swiss cheeses adds a fun feel to this soup.  It also adds a bit of extra protein if you’re looking to bulk up the soup as a meal.  Adding meatballs or chicken breasts  is a great way to bulk this tomato soup up.  .

Easy And Delicious Instant Pot Tomato Soup

Gather your ingredients:

  • 1 Tbsp olive oil
  • 1 medium yellow onion, minced
  • 3 cloves garlic, minced
  • 5 cups chopped tomatoes, fresh or canned
  • 1/4 cup tomato paste
  • 6 cups chicken or beef broth
  • 1 Tbsp brown sugar
  • 1 Tbsp chopped basil
  • 2 tsp Salt 
  • Black pepper, to taste

Get to cooking!

  • Place the oil in the Instant Pot on the Saute setting.
  • Add the onion once the oil is hot and saute two minutes until onions are clear
  • Add the garlic for one minute.
  • Turn off the saute setting and add in all other ingredients.
  • Secure the lid and select the stew/soup setting or low pressure for 10 minutes.
  • Natural release.
  • Puree the soup in batches after it’s done in a food processor or blender.  I prefer using an immersion blender while the soup is still in the instant pot.
  • Makes approximately 8 cups of soup.
