This Easy And Delicious Instant Pot Tomato Soup is a staple around our house! Not only do we love tomato soup around here, but we also love tomato soup’s best friend; grilled cheese sandwiches! This is tomato soup is in our monthly rotation of faves. If there are leftovers; I freeze them and use them as a base for vegetable soup.

Cheese is a great companion to all things tomato. My kiddos love it when I top their soup with their favorite cheese. Using mozzarella or Swiss cheeses adds a fun feel to this soup. It also adds a bit of extra protein if you’re looking to bulk up the soup as a meal. Adding meatballs or chicken breasts is a great way to bulk this tomato soup up. .
Gather your ingredients:
- 1 Tbsp olive oil
- 1 medium yellow onion, minced
- 3 cloves garlic, minced
- 5 cups chopped tomatoes, fresh or canned
- 1/4 cup tomato paste
- 6 cups chicken or beef broth
- 1 Tbsp brown sugar
- 1 Tbsp chopped basil
- 2 tsp SaltÂ
- Black pepper, to taste
Get to cooking!
- Place the oil in the Instant Pot on the Saute setting.
- Add the onion once the oil is hot and saute two minutes until onions are clear
- Add the garlic for one minute.
- Turn off the saute setting and add in all other ingredients.
- Secure the lid and select the stew/soup setting or low pressure for 10 minutes.
- Natural release.
- Puree the soup in batches after it’s done in a food processor or blender. I prefer using an immersion blender while the soup is still in the instant pot.
- Makes approximately 8 cups of soup.
