Easy Layered Lemon Lasagna No Bake Dessert. Are you a lover of lemons? We sure are! I am always creating new recipes and ways of serving meals to my family that everyone will enjoy. Lemons always make the cut. From lemonade to lemon pie, lemon desserts make the table quite often. This Easy Layered Lemon Lasagna is not only delicious and easy; it requires no baking! Yep, you don’t even have to turn on your oven or light up that stove during hot summer months.
We have made similar desserts using bananas, strawberries, and other fillings. Lemon is one of our faves because they are in abundance in south Louisiana. We even have a beautiful lemon tree in our backyard. I get asked to bring the strawberry version of this dessert to 4th of July parties every year. I even put strawberries with blueberries on top to go along with the red, white, and blue theme. Gather your supplies:
- 24 lemon creme cookies
- ½ cup melted butter
- 1 block (8 oz) cream cheese at room temperature
- 16 oz container cool whip, divided
- 1 cup powdered sugar
- 3 tablespoons of lemon juice
- 2 packages (3.4 oz) instant lemon pudding mix
- 3 cups cold milk
- lemons for garnish
Let’s get started:
- Crush cookies. I do this with a gallon size zip lock bag and rolling pin. You can also use a food processor or blender. They don’t need to be super small.
- In a medium bowl, combine crushed cookies with the melted butter and press into the bottom of a 9 X 13 pan and set aside.
- In a large bowl, mix the softened cream cheese, lemon juice, and powdered sugar until smooth.
- Fold in 8 oz cool whip and spread mixture evenly over the cookie layer. Place in the refrigerator to chill for an hour.
- In a medium bowl, mix 3 cups of milk with all of the instant pudding. Mix until the pudding starts to thicken.
- Evenly spread the pudding layer over the cream cheese layer. Chill in the refrigerator for an hour.
- Top with the remaining cool whip and chill for 2 hours or overnight.
- Garnish with lemon slices and cookies and serve!
