Easy and Delicious Instant Pot Tomato Soup

Ingredients

  • 1 Tbsp Olive Oil
  • 1 Medium Yellow onion
  • 3 cloves Garlic minced
  • 5 cups Chopped tomatoes fresh or canned
  • 1/4 cup Tomato paste
  • 6 cups Chicken or Beef broth
  • 1 Tbsp Brown sugar
  • 1 Tbsp Basil Chopped fresh or dried
  • 2 tsp Salt
  • Black pepper to taste

Instructions

  1. Place the oil in the Instant Pot on the Saute setting.

  2. Add the onion once the oil is hot and saute two minutes until onions are clear

  3. Add the garlic for one minute.Turn off the saute setting and add in all other ingredients.

  4. Secure the lid and select the stew/soup setting or low pressure for 10 minutes.Natural release.

  5. Puree the soup in batches after it's done in a food processor or blender.  I prefer using an immersion blender while the soup is still in the instant pot.

  6. Makes approximately 8 cups of soup.
