Preheat oven to 325 degrees F and line a cookie sheet with parchment paper or aluminum foil and spray with cooking spray.
Place crackers side by side on lined pan and set aside.In a 3 qt sauce pan, combine butter and brown sugar.
Bring mixture to a boil over medium/medium-high heat and boil for 3 minutes, stirring constantly.
Pour butter mixture evenly over crackers and spread evenly with a spoon or small spatula.
Bake in preheated oven for 5 minutes.
Carefully remove from oven and sprinkle chocolate chips on top.
Let stand for 5 minutes, then use the back of a spoon to spread melted chocolate chips evenly over the crackers.
Top with candy pieces and drizzle with white chocolate if desired.
Cool completely. You can place in fridge (at least 2 hours) or in freezer (at least 1 hour), then break or cut into pieces.
Store in fridge in covered airtight container.
