Sift cocoa and sugar together in large mixing bowl.
Melt butter and cheese non-stick pan, over medium-low heat, stirring constantly.
Add vanilla and nuts (if desired) to the butter/cheese mixture.
Mix the sugar with cocoa and add butter mixture.
Stir until well combined and smooth (this is the hard part)
Press into two 13 X 9 inch pans
Allow to cool and cut into bite-sized squares.Store in air-tight container.
