Line a baking sheet with parchment paper or aluminum foil
Open your crackers and lay on baking sheet
In a medium bowl, add the peanut butter, marshmallow creme, and stir until well combined.
Evenly spread a thin (not paper thin, but not too thick either) layer of the peanut butter-marshmallow mixture on half of the crackers on the baking sheet.Top with the remaining crackers, creating sandwiches; set aside.
In a medium microwave-safe bowl, add the chopped chocolate and heat on high power in 30 second increments, stirring after each time, until chocolate can be stirred smooth.
Dip each cookie into the chocolate using one or two forks, allowing the excess to drip off. You can coat half or the whole cookie.
Place dipped cookies on baking sheet.
Add sprinkles, to taste.
Place baking sheet in the fridge or freezer until chocolate has hardened before serving.
