Easy Sweet Potato Muffins

Ingredients

  • 1 1/2 cups Mashed sweet potatoes
  • 2 large Eggs
  • 1/2 cup Milk
  • 2 Tbsp Orange juice
  • 1/2 cup Butter room temperature
  • 3/4 cup Brown sugar
  • 1 1/2 cups Flour
  • 2 1/2 tsp Baking powder
  • 1 tsp Vanilla extract
  • 2 tsp Pumpkin pie spice

Icing

  • 1 cup Powdered sugar
  • 2 Tbsp Orange juice

Instructions

  1. Preheat oven to 350 degrees Fahrenheit

  2. Combine sweet potatoes, eggs, vanilla, milk, butter, and sugar

  3. In separate bowl, combine dry ingredients

  4. Add wet ingredients to dry ingredients and combine. Be careful not to over-mix.

  5. Prepare 12 baking cups in a cupcake pan with non-stick cooking spray.

  6. Fill each baking cup with batter almost to the top of the cup.

  7. Bake for 23-26 minutes or until toothpick comes out of center of muffin clean.

Icing

  1. Combine powdered sugar and orange juice in small bowl with wisk.

  2. Drizzle icing over cooled muffins.
