Did you know that May is national egg month?  Well, I didn’t even know there was such a thing, but now that I DO know; it makes sense LOL  Well, consequently, national egg month is also the best month to buy fresh eggs.  This is the cheapest you will find them all year.   How DO you stock up on something like eggs?  Well, you freeze them, of course 😀  Freeze eggs?  Yes, FREEZE EGGS!  The super awesome thing about freezing eggs is that you can freeze them in just about any form you choose.  My favorite way to freeze eggs is fresh and raw!

Here’s how I do it:
I use a non-stick muffin(cupcake) pan that I save exclusively for my freezer. I freeze all kinds of things in the muffin pan. That’s a great way to freeze single portions foods! Crack 1 egg per muffin hole. I like to spray the pan lightly with non-stick cooking spray before adding the eggs  also just to ensure that the eggs will pop out easily when frozen. Place the muffin pan with the eggs in it in the freezer until frozen solid(about an hour). Remove the pan from the freezer and the frozen eggs will pop right out! Then you can place them in a freezer bag and take them out to thaw as you need.

*NOTE ~ If you’re going to need eggs for scrambling; you will want to scramble the raw egg then freeze it.  It can still be frozen raw, just be sure to break the yolk and mix it with the rest of the egg before freezing.

You can also freeze scrambled and boiled eggs.  When I freeze my scrambled eggs; I spread them out flat on a cookie sheet in the freezer after thoroughly cooking them.  Once they are completely frozen (about an hour), I put them in a freezer bag, date, and label them!  You can also freeze boiled eggs.  You can either freeze them whole or chop them and freeze them.  I like to chop them up and lay them out on a cookie sheet in the freezer.  Once they are frozen (about an hour) I put them in a freezer bag.  Yep, it really is JUST that easy 😀

Some places state that you can freeze eggs for up to 6 months, but I will only freeze mine for 3 months.  Be sure to use them within 5 days of removing them from the freezer and always keep them refrigerated 😀

  1. This sounds great, but then how are you storing your thawed eggs in the frig? I don’t have room to keep the muffin pan in my frig or is it good to not have them covered or protected without the shell?

  2. I have never tried raw but have always frozen scrambled. I also freeze cooked bacon. This way if I am in a hurry I can just pull my kids out some bacon and eggs and a few seconds second in the microwave there is a quick breakfast. Thank you for the tip I love to buy eggs at GFS when they have the 2 1/2 dozen packs on sale.

  3. Wow! I didn’t know you could freeze eggs either! That’s great to know! Now I can buy them when they’re on sale instead of paying full price when I NEED them!
