Easy and Delicious Southern Mandarin Orange Cake.  This Mandarin Orange Cake is a staple around our house for any gathering of family or friends.  It is also an in-demand favorite at our annual Christmas dinner.  You are going to love it!

Easy and Delicious Southern Mandarin Orange Cake

This mandarin orange cake is one that evolved from the mandarin orange cake my 92 year old grandmother still makes.  Everyone loves and looks forward to this cake.  One thing I love about this recipe is that it is easily adapted to different flavors.  This is just your basic Jello poke cake with a light whipped topping icing.  You can use any flavor of gelatin to easily change the flavor of the cake.  The icing can be used by itself, with no fruit added or it can be used with, just about, any fruit combination.  I encourage you to give this Mandarin Orange Cake recipe a try, just as it is, then try and experiment with other flavors.  Let me know, in comments below, what your family’s favorite way to recreate this cake is!

Easy and Delicious Southern Mandarin Orange Cake

Servings 12

Ingredients

  • 1 Yellow Cake Mix prepared in a 9X13 pan Your favorite
  • 1 3 oz box Orange Jello Mix
  • 1 3.4 oz box Instant Vanilla Pudding Mix
  • 1 8 oz tub Whipped Topping
  • 1 15 oz can Mandarin oranges drained

Instructions

  1. Bake your cake in a 9 X 13 pan according to directions and allow to cool to room temperature.  

  2. Once the cake is room temperature, poke holes all around the cake.  I use the blunt end of a wooden skewer. 

  3. In a medium bowl, carefully mix 1 cup of boiling water with Jello mix until completely dissolved.  

  4. Pour jello over cake and place cake in the refrigerator.  

  5. While cake is cooling, mix pudding mix with 1 cup of milk and juice from Mandarin oranges until well blended.

  6. Fold Mandarin oranges and whipped topping into the pudding mixture until blended well.  

  7. Remove cooled cake from the refrigerator and ice with pudding mixture.  Serve cold and enjoy!
