Cajun Corn Dip

Do you love bacon? Well, we certainly do! We are celebrating bacon with Winn-Dixie this month. To help celebrate; I made a TON of bacon dishes that I cannot wait to share with all of you! Just for this post; I created this AWESOME Cajun corn dip with bacon! Nothing goes better with corn or corn bread than BACON!

Bacon has made my day 😀  Okay, back to the bacon.  It would only take you a few seconds, after walking in the store, to see that Winn-Dixie is CRAZY about bacon!  There are signs EVERYWHERE!  Not only that, but they have these awesome FREE bacon books filled with AWESOME bacon recipes.  Isaiah was especially happy about these.  He picked up 3 of them so he could give them to his friends!  He thinks his friends get as excited about food as he does 😀  As usual, we had a fun and productive trip to Winn-Dixie.

Now, to the yummy part.  This is a recipe I have made many times and always LOVE to add bacon to it!  We take this to church functions, family get-togethers, and family night here at home.   This is one of our favorite party foods.  Party meaning, anytime we want to sit around and snack 😀 It is so easy to make and tastes amazing. You can even make it healthier by using turkey bacon, low fat cheese, low fat mayo, and greek yogurt in place of the sour cream.  It will still taste great!

Gather your ingredients:

6 slices of bacon, cooked and crumbled
2 – 11.75 oz cans of whole kernel corn
2 cups sharp cheddar cheese
3/4 cup mayonnaise
3/4 cup sour cream
3 green onions diced
1 tsp Cajun Seasoning (I use Zatarains)
1 jalapeno pepper seeded and diced

STIR IT UP!
Yep, that’s all you do; mix all of the ingredients together in a large bowl then allow to sit in the refrigerator for at least 2 hours before serving. Our favorite way to eat this dip is with crackers, but you can serve it with corn chips or tortilla chips too! This would also be PERFECT for the Super Bowl!
